Nut and date energy balls

Ingredients

  • 10 Medjool dates, pitted
  • 2 tsp vanilla extract
  • Pinch of salt
  • 1 cup almond meal
  • 1/3 cup peanut butter
  • 1/4 cup maple syrup
  • 1/2 cup dark chocolate chips, melted
  • 1 cup granulated peanuts

Method

  1. Line a tray with baking paper.
  2. Soak dates in boiling water.
  3. Drain water and add to blender with 1 tsp vanilla and a tiny pinch of salt. Then blitz until combined.
  4. Scoop out into a mixing bowl, add ¼ cup almond meal and mix to combine.
  5. In a separate mixing bowl, whisk peanut butter, maple and remaining vanilla. Then add remaining almond meal and stir to combine.
  6. Add date mixture to peanut butter mixture, and stir together until just combined.
  7. Roll mixture into balls with your hands (if the mixture is too sticky when rolling the balls, add a few more tablespoons of almond meal, or if it’s too dry, add a tablespoon or so of water).
  8. Dip balls into melted chocolate with a fork, and then roll in granulated peanuts to cover.
  9. Place onto your lined tray, and repeat with remaining balls.
  10. Place into the freezer for 30 minutes to set.
