Steak with walnut and rocket pesto

Ingredients
- 100g raw walnuts
- 100g rocket leaves
- 2 cloves crushed garlic
- 1 long red chilli, seeded and chopped
- Cracked black pepper, to taste
- ¼ cup olive oil
- ¼ cup warm water
- 4 180g sirloin steaks, trimmed of fat
- 4 cups steamed mixed vegetables
Method
- Place the walnuts, rocket, garlic, chilli, salt and pepper in the bowl of a food processor or blender. Process for a few seconds until combined, then slowly pour in the olive oil in a thin stream, followed by the water. Set aside.
- Heat a stovetop grill on high. Spray the steaks with a little oil spray and place on the grill. Cook for 3-4 minutes on each side for medium well done, or cook to your liking.
- Drop a dollop of pesto on top of each steak and serve with steamed vegetables.
